Take a wok add some oil and heat it. Then add two eggs and sprinkle some salt & pepper powder, prepare scrambled eggs and set it aside.
In the same wok add some oil chopped green chili, crushed garlic, grated ginger and fine chopped onions, sauté it till the raw smell disappears.
Then add vegetable of your choice like chopped capsicum, beans, carrots and cabbage, add salt & pepper to it. Stir it well till the veggies are cooked.
Add the leftover rice and scrambled eggs prepared previously to the mixture.
Add some soy sauce, chili sauce, vinegar and ketch up to it. Mix all of it well and stir fry for 2 minutes.
Your egg fried rice it Ready!!
PRO TIP: Add less salt because all the sauce contain some salt in it already.
