Notes :
Add a pinch of salt to chopped onions and set it aside for 5 mins, so that all the moisture from the onions is absorbed naturally helping us to get crispy pakodas.
Direction For Recipe :
Take two big onions slice it nicely and two green chilis and chop it finely.
After slicing onions, take a large mixing bowl add onions to it along with pinch of salt to it and set aside for 5 mins while arranging rest of the ingredients required for the recipe.
After 5 mins gently squeeze the water from onions, then start adding cumin seeds, ajwain seeds, fenel seeds, fine chopped green chillies and then add all masalas one by one.
Mix all ingredients together, then add gram flour and mix them well and taste the masala to check if salt is ok.
Take a Sauce pan fill it with oil for frying and heat it in a medium flame untill the oil is ready for frying.
Once oil is ready start add the onions base to oil for frying and keep them frying till it turns red and crispy.
Once they turn crispy take them out and place on kitchen tissue so all the excess oil is absorbed.
Serve hot pakodas along with some chilli sauce or homemade green chutney (made of coriander, mint leaves and green chillies).
You can have it along with hot coffee or ginger tea as evening snack and very beautiful combination for rainy days.
